Product Description
Beef is the culinary name for meat from cattle. Beef can be harvested from bulls, heifers or steers. Its acceptability as a source of food varies in different parts of the world. It can be used to prepare stew, casseroles, soups, name it. Its stock is also commonly added to several dishes to boost taste.
Beef muscle meat can be cut into roast, short ribs or steak (filet mignon, sirloin steak, rump steak, rib steak, rib eye steak, hanger steak etc.) Some cuts are processed (corned beef and beef jerky), and trimmings, usually mixed with meat from older, learned cattle, are ground, minced or used in sausages.
Storage Information
Beef should be chilled immediately after it is received. Since meat freezes at 28F and microbial growth increases rapidly above 40F, it should be stored between 28F and 32F. Beef should never be held at temperatures above 40F for more than 2 hours because as bacteria grow, beef quality deteriorates rapidly.
